fried oyster mushrooms w/ sweet chili sauce

Sauce:

1 cup water

1 cup rice vinegar

1 cup sugar

2 tsp fresh ginger, minced

2 tsp garlic, minced

2 tsp hot chile pepper, minced

2 tsp tomato paste

2 tsp cornstarch

2 cups oyster mushrooms

1 tbsp flaxseed meal

1 cup flour

¼ tsp sea salt

¼ tsp ground black pepper

¼ tsp cayenne pepper

2 cups canola oil

1 green onion, sliced thinly

Add flaxseed meal and 2 tbsp water to a small dish. Mix to combine and set for five minutes or until thickened. Slice oyster mushrooms. Mix flaxseed “egg” with flour, salt, and pepper. Coat mushrooms in flaxseed flour mixture. Heat oil in a pan and fry mushrooms until crispy and golden brown. Remove mushrooms and place on a paper towel to absorb excess oil. To make sauce, boil water and vinegar in a saucepan. Mix in sugar, ginger, garlic, chile pepper, and tomato paste, and simmer for 5 minutes. Add cornstarch to thicken. Serve fried mushrooms with chopped green onion and sweet chili sauce.
